Many, many animals bleed from the nose when under physical duress; it's common for animals that breathe only through the nose (bovines, equines, etc. etc.).

As the photographer said, no one hurt the bull; unlike bullfighting, it was not stabbed various times with swords, goaded towards an armed opponent, had its ear chopped off for a trophy or been killed at the end of a bloody battle. If teased, many male animals will charge, even domestic ones.

The picture is lovely, and I'm glad it isn't from a bullfight.
